It’s always the perfect time to enjoy this Beef Stew for dinner and we think it’s an especially good way to warm up at the end of a cold, winter’s day.

Stir in all the remaining ingredients, bring to the boil, then remove from the stove. Cover with a lid.

Place in the oven and cook for 2.5 to 3 hours. The meat should be tender and the potatoes should have started to thicken the stew.

Ingredients

  • 1 kg stewing steak all visible fat removed and diced
  • 1 large onion chopped
  • 1 large courgette chopped
  • 4 large potatoes chopped into chunks
  • 4 large carrots chopped
  • 2 beef stock cubes made up with 500ml boiling water
  • low calorie cooking spray
  • 1 tsp salt
  • 1 bay leaf
  • 1 tsp freshly ground black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp Worcestershire sauce
  • 1 small swede chopped
  • 1 large leek chopped
  • 1 stick celery chopped

Can I make this in my pressure cooker and if so how long? I love my pressure so don’t really want to go to the expense of buying the Instant Pot.

    Hi Jean, yes, you can make this in your pressure cooker. Just follow the instructions given in Instant Pot Beef Stew but brown the meat and vegetables in a frying pan first. Hope this helps!

I can’t get hold of onion powder. Could I use one granules instead? If so, how much onion granules should I use? Thanks

    Hey Emily, onion granules and onion powder are essentially the same thing its just that the powder is ground down finer so granules will be fine! Use the same amount as listed in the recipe so 1 tsp, hope that helps!
