  • Potatoes - I used Yukon Gold potatoes for this recipe as they hold up the best. You can also use yams or sweet potatoes, but I don't recommend russet potatoes.
  • Onion - Use a white or yellow onion for added flavor.
  • Vegetables - You'll need carrots and celery for this recipe. You can also use your favorites, such as peas, broccoli, or green onions.
  • Broth - We used chicken broth. But if you have time, make your own chicken stock for the best flavor.
  • Ham - This ham soup recipe is great for leftover ham or ham steak.
  • Flour - All-purpose flour is used to help in making a thick, hearty soup.
  • Half and Half - If you don't have any on hand, add heavy cream or butter to whole milk.
  • Sour Cream - Great for making a creamy soup. You can also use cream cheese.
  • Seasonings - We used salt, black pepper, and dried parsley. You can also use bay leaves, minced garlic, or other favorites for extra flavors.
  • Cheese - Garnish with some cheddar cheese or another variety.

How To Make Slow Cooker Ham and Potato Soup: Step-By-Step

Step 1. Prepare the vegetables on a cutting board with a chef's knife. Cube the potatoes into bite-sized pieces, leaving the peels on. Chop the carrots and celery. Dice the onion.

Step 2. Next, cut the ham into bite-sized pieces.

Step 3. Add the ham, potatoes, onion, carrot, celery, chicken broth, dried parsley, salt, and pepper to the slow cooker. Stir the ingredients and cook on low for 7-8 hours or high for 4-5 hours.

Step 4. Mix the flour, half and half, and sour cream in a small bowl until smooth. Add this mixture and stir to incorporate into the soup.

Step 5. Use a potato masher to mash the soup a few times to break down some of the vegetables. This will help thicken the soup.

Step 6. Set the temperature to high, cover the soup, and cook for 15-20 minutes.

Step 7. Ladle into bowls for serving. Enjoy!

Tips

  • Use leftover holiday ham as a great way to make this soup. You can also put the leftover ham bone right into the slow cooker for more flavor.
  • If you want to add a variety of vegetables to this family-favorite soup, you can. Adding frozen veggies like corn or even black beans is always a great way to add more depth.Broccoli is also a great idea because it holds up well during cooking.
  • You can also vary the amount of potatoes vs. ham that you have. If you want extra ham, add more ham. If you want fewer potatoes, change it up.

Variations

  • Add bacon - A few pieces of diced bacon are never a bad idea. The salty flavoring pairs well with the crock pot ham and compliments the flavors.
  • Mash the potatoes - If you want creamy potatoes in your soup, you can actually mash them with a potato masher and add them. This will create a thicker texture and become more of a potato chowder with all the same flavors.
  • Use sweet potatoes - To make this a tasty fall-flavored soup, use sweet potatoes in place of white potatoes.

While this perfect soup is great to make any time of the year, I don't actually recommend freezing it. Anytime dairy products are in the soup base, it risks freezing and unthawing at a different temperature.

This easy recipe can last up to 5 days as long as you store it properly in the fridge. For the best results, let the soup cool down to room temperature and add it to an airtight container.

When it's time to reheat, add a serving of soup to a pan and warm it on the stovetop, or put it back into the slow cooker and reheat it low and slow.

Can I make this potato soup gluten-free?

To make this gluten-free, replace the flour mixture with a cornstarch slurry instead. This will still give the soup a thickening agent without the need for flour or other items containing gluten.

What can I use in place of ham?

If you don't want to use ham in this soup, you can use leftover turkey, sausage, or any other type of meat that you want.

You can also leave out the meat completely and use black beans as an added protein source.

Ingredients

  • 2 pounds potatoes Yukon gold, or russets
  • 1 cup onion chopped, about 5 ounces
  • 2 stalks celery chopped, about ½ cup
  • 2 large carrots chopped, about 4 ounces
  • 4 cups chicken broth
  • 12 ounces ham about 3 cups, cubed
  • ¼ cup AP flour
  • cup half and half substitute whole milk
  • ½ cup sour cream
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon dried parsley
  • shredded cheese optional for garnish

Instructions

  • Crock Pot Ham and Potato Soup

  • Prepare all the vegetables. Using a cutting board, and a chef's knife. Cube the potatoes into bite-sized pieces, no need to peel the potatoes. Chop the carrots and celery, and dice the onion.

  • Using the cutting board, cut the ham into bite-size pieces.

  • Add the ham, potatoes, onion, carrot, celery, chicken broth, dried parsley, salt and pepper to your slow cooker. Stir the soup ingredients together and then cook on low for 7-8 hours, or on high for 4-5 hours.

  • In a small bowl, mix the flour, half and half and sour cream until smooth. Add this mixture to the cooked soup and stir to incorporate.

  • Using a potato masher, mash the soup several times to break down some of the vegetables. This will help thicken the soup.

  • Set the temperature to high, cover the crockpot and cook another 15 to 20 minutes.

  • Ladle into soup bowls and enjoy!
