This easy Crock Pot pork chops recipe never fails to impress for a healthy dinner. The chops get as tender and juicy as slow cooked pork tenderloin, with a little more flavor from leaving meat on the bone and an irresistible gravy.

They are a little similar to smothered pork chops, which is actually what inspired this recipe for me. But unlike those, the gravy isn’t creamy and we’re cooking the pork chops in the slow cooker. Whether you’re looking for a flavorful weeknight meal or planning to entertain guests, this dish will be a guaranteed hit.

Ingredients & Substitutions

This section explains how to choose the best ingredients for easy slow cooker pork chops, what each one does in the recipe, and substitution options. For measurements, see the recipe card below.

  • Pork Chops – I used bone-in pork chops for this recipe, but boneless pork chops work as well. The kind with the bone are just a bit more flavorful. For best results, look for thick cut pork chops that are at least 1 inch thick.
  • Sea Salt & Black Pepper
  • Olive Oil – For searing the pork chops and sauteing the onions. You can also use avocado oil, coconut oil, or any other heat-safe oil.
  • Onion – I used a yellow onion, but you can also use white or red onions.
  • Garlic – Fresh garlic will give you the best flavor, but 2 teaspoons jarred minced garlic will also work. If you don’t have either, you can simply season the pork chops with 1/2 teaspoon of garlic powder instead.
  • Arrowroot Powder– A great cornstarch substitute for creating a smooth and silky sauce. You could also use cornstarch, though. For a low carb option, substitute 1/4 teaspoon of xanthan gum instead.
  • Chicken Broth – I prefer reduced-sodium, but you can use regular chicken broth or even make homemade chicken broth or bone broth for added richness and flavor.
  • Worcestershire Sauce – Adds a savory and light sweet depth of flavor to the Crock Pot pork chops. If you’re looking for a substitute, you can try using soy sauce (if it fits your lifestyle), coconut aminos, or another soy sauce substitute for a similar umami taste.
  • Dijon Mustard – You can use yellow mustard or spicy brown mustard as alternatives.
  • Fresh Herbs – This slow cooker pork chops recipe calls for fresh thyme and rosemary, but you can use other fresh herbs, such as fresh parsley, sage, or oregano. You can also use 2 teaspoons of dried herbs (or simply Italian seasoning) in place of the 2 tablespoons of fresh herbs.

VARIATION: Slow cooker ranch pork chops!

Simply replace the Dijon mustard, thyme, and rosemary with 2-3 tablespoons of ranch seasoning mix.

How To Cook Pork Chops In The Crock Pot

  1. Season the pork chops. Pat dry with paper towels, then sprinkle both sides with salt and pepper.
  2. Sear both sides. Heat olive oil in acast iron skillet(or other large skillet) over medium-high heat. Add pork chops and sear on each side until golden brown. Remove and place in aCrock Pot.

  1. Saute the onions. Add sliced onion to the skillet and cook until it begins to soften. Add the minced garlic and cook until fragrant.
  2. Make the gravy. Sprinkle arrowroot powder over onions and garlic, stir to combine, and cook until the arrowroot powder is well incorporated and a slurry forms. Slowly whisk in the chicken broth. Bring the mixture to a simmer and cook until thickened slightly. Stir in the Worcestershire sauce, Dijon mustard, thyme, and rosemary.

  1. Combine. Pour the gravy over the pork chops in the slow cooker. Make sure it covers them evenly.
  2. Slow cook. Cover and cook pork chops in the Crock Pot until tender. Garnish with more fresh herbs if you like.

TIP: Want a thicker gravy?

When the slow cooker pork chops are done, the gravy will be on the thinner side, since they release additional liquid as they cook. If you want it thicker, you can remove the chops and add more arrowroot powder to thicken it. Personally, I like that it’s thin and I can drizzle it over the pork as well as side dishes.

How Long To Cook Pork Chops In The Crock Pot?

Bone-in pork chops in the Crock Pot take 5-6 hours on Low or 2-3 hours on High, while boneless ones take 3-4 hours on Low or 1-2 hours on High. They should come out very tender.

Storage Instructions

  • Store: Transfer leftover Crock Pot pork chops with gravy to an airtight container, and refrigerate for up to 3-4 days.
  • Meal prep: You can sear the pork and make the gravy ahead of time. Store separately, and slow cook the day-of. You can also make the entire recipe ahead and portion into meal prep containers with some mashed potatoes or mashed cauliflower for easy lunches.
  • Reheat: Transfer to a microwave-safe dish and heat at medium power until warm. You can also reheat pork chops in the slow cooker on the Warm setting.
  • Freeze: Cool and transfer to an airtight container or zip lock bag, removing as much air as possible. Freeze for up to 3 months. Thaw in the refrigerator overnight before reheating.

What To Serve With Crock Pot Pork Chops

  • Mushrooms – A topping of sauteed mushrooms or roasted mushrooms tastes amazing on these slow cooker pork chops!
  • Vegetables – Pair these chops with your favorite veggie side! I like to make quick and easy ones, like air fryer green beans or sauteed broccoli with garlic. You could also just throw some root vegetables into the slow cooker with the pork. For a meal full of comfort pair this dish with a creamy, cheesy broccoli and cauliflower casserole.
