Brownie Bites in Cookie Form

Looking for a quick batch of cookies? You’ve come to the right place!

My journey to discover this cookie begins with a hankering for brownie bites. I felt sure I had a brownie mix in the cupboard but couldn’t locate one. I did have a Devil’s food cake mix. (I always keep those on hand. If you’ve followed me for any time at all you know I’m all about doctored cake mixes.)

I decided to do a chocolate on chocolate brownie bite with chopped pecans but didn’t want to mess with the mini brownie pan. So, in the end I decided cookies would be easiest.

These chocolate cookies are just about the simplest thing I’ve ever baked. The only “complication” (if you want to call it that) is that the dough is a bit stiff if you opt for one single egg, as I did. But talk about simple!

You can make this cookie a variety of ways. (I will list several ideas below the recipe.) But let’s start with the basics.

  • chocolate cake mix
  • large eggs
  • room temperature butter
  • chocolate chips
  • chopped pecans (optional)

How to Make these Easy Double Chocolate Cookies

Preheat oven to 375 degrees Fahrenheit.

Prepare a cookie sheet with parchment paper. (This recipe will make 24 cookies.)

Put the box of cake mix, eggs, and butter into a large mixing bowl.

If you have a stand mixer with paddle attachment you might want to use it. I opted for my hand mixer.

Work the dough until it comes together.

It’s time to add the chocolate chips and pecans. If you’re not a nut lover, you can skip those.

Using a cookie scoop place balls o dough on prepared baking sheet. Press down slightly using your palm.

Place in preheated oven and bake at 375 degrees for 10 – 12 minutes. (Times may vary based on your oven and how many eggs you add.)For best results, don’t over bake.

Remove from oven and place on wire rack to cool.

Store in airtight container. Cookies can be frozen in ziplock freezer bag up to two months.

What to Expect from these Double Chocolate Cake Mix Cookies

These chewy cookies are absolutely rich with chocolate flavor.

The flavor will vary a little depending on the cake mix you use. (For instance, if you opt for a milk chocolate cake the cookies won’t be as strong.)But they are definitely filled with flavor, a yummy sweet treat meant to satisfy your sweet tooth.

I loved the warm gooey chocolate chips and the crunch of the pecans.

Most of all, I love how quickly these came together! And remember, the brand of cake mix doesn’t matter: Betty Crocker, Duncan Hines, Pillsbury. . .the choice is up to you!

I’m already thinking of lots of ways to vary this recipe. Here are some ideas I came up with:

Brown Sugar: Add 2 – 3 tablespoons to your recipe for a richer flavor!

Mint Chocolate: Skip the pecans and use mint chocolate chips in place of semi-sweet.

Coffee: Use a spoonful of espresso powder in your mix. Melt it into the butter (or add it in liquid form with a spoonful of warm water).

Coffee chocolate chips: Yep! You can buy espresso chips. They would be perfect if you add the espresso to the dough.

Peanut butter chips: If you’re going for a Reese’s flavor add peanut butter chips and skip the pecans. You can really dress these up but pressing them thinner and turning them into sandwich cookies with peanut butter between the layers.

White chocolate chips: They are milder than semi-sweet and will lighten things up!

Fresh berries: Skip the chocolate chips and pecans and add chopped fresh strawberries or raspberries. (Yum!)

Cayenne Pepper: Yep, I know. Skip the pecans, keep the chocolate chips, and add a pinch of cayenne. (Spicy!)

Cake Mix Christmas Cookies: Skip the nuts and roll in Christmas sprinkles or drizzle with red and green royal icing!

Another fun idea: Use an ice cream scoop to make a larger cookie. (Mix will make 12 – 15 larger cookies.)
