Ingredients and substitutions

  • Extra-lean ground beef – use ground turkey or chicken for a leaner option. You could also use a meat substitute for a vegetarian option.
  • Yellow onion – white onion or shallots can be used instead.
  • Garlic – freshly minced garlic is best but jarred minced garlic will work in a pinch.
  • Taco seasoning – use a store-bought version or make your own taco seasoning mix.
  • Lime juice – freshly squeezed lime juice is best. Bottled lime or even lemon juice can be used if it’s all you have on hand.
  • Frozen corn – fresh or frozen corn would also work.
  • Black beans – kidney beans would also be good. Make sure you drain and rinse the beans before adding them to the soup.
  • Green chiles – fresh or canned jalapenos would also work.
  • Diced tomatoes – use a can of crushed tomatoes instead.
  • Beef broth – swap out for chicken or vegetable broth.

How to make taco soup in the crockpot

Step 1: Brown the ground beef.

Brown the ground beef in a skillet over medium-high heat.

Step 2: Add everything to the crockpot.

Add the beef and all remaining ingredients (except for the toppings) to crockpot.

Step 3: Cook the soup.

Cook on high for 4 hours, or on low for 8 hours.

If you’re serving this to a group, you can even set out a bunch of different toppings so everyone can customize their soup to their liking. How do you thicken taco soup?

I find that this crock pot taco soup is plenty thick on its own, but if you want to make it even thicker, you can stir in a cornstarch slurry at the end.

Can you use a different kind of meat?

Yes! This soup would also taste delicious with ground turkey, chicken or pork. Just make sure you brown the meat before adding it to the crockpot.

Could you make it in the Instant Pot or on the stovetop?

This slow cooker taco soup isn't super spicy, but it definitely has a bit of a kick! If you don't want too much spice, use half the amount of green chilies and substitute the other half for diced green peppers. You'll still enjoy all the soup's delicious flavors but without as much heat.

Storing and reheating

You can store any leftovers of this crockpot taco soup recipe in the refrigerator without the toppings for up to 5 days. To reheat, just stick it in the microwave for 1 to 2 minutes or reheat it in a pot on the stovetop. Add on your fresh toppings and dig in!

Can you freeze taco soup?

This crock pot taco soup recipe is definitely freezer-friendly. You can freeze the soup in freezer-safe containers or Ziploc bags for up to 3 months.

When you’re ready to enjoy, let the soup defrost in the fridge overnight then reheat as normal. You can also reheat individual servings from frozen in the microwave for 6 to 7 minutes, stirring halfway through.

Ingredients

  • 1 lb extra-lean ground beef
  • 1 yellow onion, diced

  • 1 (540mL) can black beans, rinsed and drained
  • 1 (127mL) can green chilies
  • 1 (796mL) can diced tomatoes or 3 cups jarred salsa
  • 2 cups beef broth

  • Brown ground beef in a large skillet over medium-high heat, about 5 minutes.

  • Add beef and remaining ingredients (except for toppings) to crockpot. Cook on high for 4 hours, or on low for 8 hours.

  • Serve taco soup in bowls with preferred toppings and store soup separate from toppings in fridge up to 5 days, or freeze up to 3 months. Enjoy!

  • Brown ground beef in a large pot over medium-high heat, about 5 minutes. Add in onions and garlic, sauteeing another 2 minutes until fragrant.

  • Add remaining ingredients (except for toppings) to pot, bringing everything to a boil. Cover with a lid then lower heat to a simmer. Cook for 25 minutes, stirring occasionally.

  • Serve taco soup in bowls with preferred toppings and store soup separate from toppings in fridge up to 5 days, or freeze up to 3 months. Enjoy!
