How do you make hamburger patties that don’t fall apart?

Using this hamburger patty recipe is a good start, because there aren’t a lot of ingredients. When you add in other ingredients, you’re adding in other variables to the burgers which can make burger meat fall apart. Also, using ground beef that is too lean (95% or above) doesn’t have enough fat content in it to stay together easily.

Do homemade burgers need eggs?

No, homemade burgers don’t need eggs to bind them. Other ground beef recipes like these low carb meatballs need eggs to help bind the ingredients because they have additional dry ingredients like bread crumbs and onions. The few ingredients is why this is a very easy burger recipe.

I will try them with almost any topping – except peanut butter. Well, maybe I’d try that but I’ve seen it out at some of the best Portland restaurants, but haven’t ordered it! My husband Patrick swears the best burger is a toss up between plain ol’ BBQ sauce and fried onions, or something with fancy cheese – like blue cheese or gouda.

FAQs

How do you make ground beef stick together for patties? ›

Add 1 egg yolk per pound of hamburger. It won't add appreciably to the fat content and will bind the meat beautifully. The other thing you can do is add canned, drained, crushed black beans or chickpeas to the hamburger. The starch from the beans will bind the meat together and add an interesting taste.

How do you keep hamburger patties from falling apart? ›

Go easy on the shaping. When you're making your burgers, try not to manhandle them too much or else you'll end up breaking the meat into smaller pieces than you have to. We recommend simply shaping the beef into a vague burger shape with the least amount handling as possible.

Do I need to put an egg in homemade burgers? ›

One of the most important steps to making hamburger patties from scratch is binding the ingredients together. If they aren't bound well, the patties will start to fall apart as soon as you start cooking them. The most commonly used binding agent for hamburger patties is eggs.

What is a good binder for burgers? ›

No, eggs are not necessary for binding burger patties, though they are commonly used for binding them. However, you can use other binding agents such as breadcrumbs, cracker crumbs, potato starch, flour, and porridge oats to bind burger patties according to your preferences.

How to make burger patties from ground beef thin? ›

A flat press works best to get the patties very thin. This is our favorite Smash Burger Tool, but you can also push over the top of a spatula with a meat mallet to smash burgers. Also, pre-cut parchment paper makes the job easy, but you can cut your own pieces.

How to make homemade burgers that don't fall apart? ›

Chill or freeze your burgers

"This will help them keep their shape when they're cooking and stop them falling apart." You can also freeze them before cooking. Lay them on a tray in the freezer and, once they're frozen, pop them into freezer bags to save space. To defrost them, lay them back on the tray.

How do you make hamburger patties stay flat? ›

Burgers have a tendency to swell up like a football as they cook. The edges of a patty cook faster than its center, causing the meat to puff up as it shrinks. You can avoid this problem through a few easy techniques, like pressing down on the raw burger patties with your thumb or by smashing them flat.

Do you need to add anything to ground beef for burgers? ›

Beef burgers need nothing more than a sprinkle of salt, preferably kosher salt, to cook up juicy and delicious.

Do you need breadcrumbs in burgers? ›

Breadcrumbs are not usually included in a traditional burger patty mixture, but their addition to this recipe helps give the cooked patties a lighter, more tender texture. If making these burgers gluten free (and serving with a GF bun), you can omit them.

How do you keep beef burgers from falling apart? ›

Avoid flipping patties too soon

If you try to flip too early, the patty may stick to the grill and fall apart. It's recommended that you leave burgers on the grill for around 4-5 minutes to form a crust before flipping. Try to flip the burgers only once, as constant flipping can cause them to break apart as well.

Is Worcestershire sauce good in hamburgers? ›

Milk: Milk helps to keep the burgers nice and juicy and tender when cooked. Worcestershire sauce: This savoury condiment is full of umami flavours and adds some extra tastiness to each bite. Seasonings: Garlic powder, onion powder, salt and pepper are used to flavour up the ground beef.

How many burgers does 1 pound make? ›

Burgers. Our Test Kitchen uses a range of 1 to 1½ pounds of ground beef to make 4 burgers, which is 4 to 6 ounces of ground beef per burger.

What causes ground beef to stick together? ›

Normally, this makes the meat juicy since those dissolved proteins hold onto moisture better. It's why we salt meat ahead of time. But ground meat is a little bit different. Salt greatly increases the chances that proteins in ground meat link together.

How do you keep hamburger patties from sticking together in the freezer? ›

Use wax or parchment paper.

As you're stacking the frozen hamburger patties in the freezer bag, place a small piece of wax or parchment paper between each burger. The paper will keep the burgers from touching each other and prevent moisture building from causing the burgers to stick together.

What makes ground beef sticky? ›

Fresh ground beef should have a relatively firm consistency that breaks apart when you squeeze it. However, a sticky or slimy texture — either when cooked or raw — may indicate the presence of spoilage bacteria. You should toss it immediately.
