  • Eggs: I use large 4 eggs at room temperature in each small casserole.
  • Crushed tomatoes: I use canned crushed tomatoes.
  • Cheddar cheese: I use sharp cheddar cheese for best flavor.
  • Olive oil: To saute the onion and garlic. You may use butter instead if you like.
  • Salt and black pepper: To taste
  • Chilly flakes: Give your dish some heat; if it is not available, you can use cayenne pepper instead.
  • Italian seasoning: If you are not a fan of Italian seasoning, you can replace it with dried thyme, basil or sage.
  • Garlicand onion: I prefer to saute garic and onion to add a delicious flavor.
  • Fresh Parsley: Optional, to garnish the dish.

How to Make Quick Breakfast Casserole For Two?

Before you start, preheat the oven to 180C/ 356F.

First Step: Heat some olive oil in a skillet over medium-high heat. Add the onions and garlic and sauté' until the onion softens about 3-4 minutes. Then add the crushed tomatoes, salt, black pepper, Italian seasoning, and chilli flakes. Simmer for about another 8-10 minutes then turn off the heat.

Second Step: Divide the mixture between two small baking dishes or 2 small casserole dishes. Crack the eggs over the mixture in the baking dishes.

Step Three: Sprinkle the cheddar cheese on the top (you can add some salt and pepper if you like) then bake for 15-20 minutes.

Step Four: Garnish with chopped fresh parsley and serve.

Pro Tips!

  • You can garnish with fresh basil or cilantro instead of parsley.
  • I recommend that you grate the cheddar cheese yourself because freshly grated cheese melts so well and gives the dish a better taste.
  • You may bake this dish in a large casserole dish instead of 2 small casserole dishes.

Alternatives and Substitutes

  • Use fresh herbs instead of Italian seasonings; you can use thyme, rosemary or basil.
